We grow Avocados From Mexico® to reach the highest standard, and dry matter testing is how we ensure they do. Simply put, the higher the score, the better the flavor and consistency. While the export requirement is 21%, the Mexican avocado industry goes beyond industry standards, achieving 23% dry matter or higher.
